An adaptogenic, oven-baked take on the iconic Pop-Tarts® - these are especially delicious with the addition of Lion's Mane and topped with savory Prash, a blend of adaptogens, local honey and grass-fed ghee... Yum!

I grew up never being allowed to eat pop tarts because they were full of sugar, dairy and gluten, so I decided to create my own version of the classic cinnamon and sugar pop tart… and man did they turn out good!!  

I love coming up with recipes that are nutrient rich and made with only real foods. I decided to add in Lion’s Mane for an extra boost. These pop tarts are a perfect afternoon snack alongside your favorite cup of coffee, as an after dinner sweet treat, or just because.

(makes six tarts)


2 1/2 cups almond flour

1 cup oat flour

1 tsp. sea salt

1/2 cup coconut oil

1/2 cup maple syrup

1 tsp. Lion's Mane

2 eggs (to make vegan, sub 2 flax eggs)

cinnamon + sugar filling

1/2 tsp. coconut sugar

1/2 tsp. sea salt

2 tsp. cinnamon

2 tbs. almond butter

optional toppings

Preheat the oven to 350 degrees F and line baking sheet with parchment paper

Add all pastry ingredients into a mixing bowl and combine until a dough forms, then set the dough in the fridge to chill for 15 minutes or until you can roll out without it being sticky

While the dough chills, add the filling ingredients into a small bowl and combine

Remove dough from the fridge and roll out in between two sheets of parchment paper, until its about 1/4 inch and can slice into twelve rectangles total

Add one teaspoon of the filling mixture onto six of the rectangles, then lay the remaining dough on top and seal lightly with a fork

Poke a few holes in the top of each, bake for 15 minutes or until golden

Let cool for a few minutes, then top with Prash or a drizzle of coconut butter (recommended for sweeter pop tarts)
